Carrot Cake

Ingredients

  • 3 cups grated carrots

  • 4 eggs, unbeaten

  • 2 cups sugar

  • 1 1/2 cups salad oil

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 2 cups flour

  • 1 cup chopped walnuts

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon

Directions

  • Mix carrots and oil together, pour into mixing bowl.
  • Add rest of ingredients to mixture and beat well.
  • Pour mixture into angel food pan.
  • Bake 40-45 minutes or until toothpick comes out clean.
