Lady Finger Cheesecake

Ingredients

  • For Cheesecake
  • 1 pint heavy cream

  • 3 packs lady fingers

  • 2- 8oz. packages cream cheese

  • 1 cup sugar

  • 2 teaspoon vanilla

  • For Topping
  • 1/3 cup sugar

  • 1 tablespoon corn starch OR 1 cup crushed pineapple

  • For Alternate Topping
  • 1 – 20 oz. can crushed pineapple

  • 1/2 cup sugar

  • 2 tablespoon lemon juice

  • 3 tablespoon corn starch

Directions

  • Chill bowl and beaters
  • Whip heavy cream until thick.
  • Line sides and bottom of 10 inch spring form pan with lady fingers
  • Cream the cream cheese with sugar and vanilla. Fold in whipped cream.
  • Spread layers of cream in the pan and top with lady fingers. Repeat twice, ending with cream cheese mixture.
  • For Topping
  • Add all topping ingredients in a saucepan and cook over low heat until clear and thick.
  • Cool and top the cake. Chill for 3 hours.
